ALMOND ENERGY BALLS

Quick on the go snacks or an afternoon protein pick-me-up. Here’s how to make your Almond Energy Balls. 

Ingredients, about 10 balls

70g blanched almost or Brazil nuts

2 tablespoons coconut oil

2 tablespoons maple syrup

2 tablespoons cacao powder 

4 tablespoons almond butter

200g dried apricots

How to

Place the nuts in a food processor and roughly chop. Place all the remaining ingredients, in a large bowl. Add the nuts and mix together thoroughly. Place this mixture in the fridge to firm up for 15 minutes.

Roll the mixture into about 10 small balls, then roll each ball in the coconut or any of the other coatin. Store in the fridge until ready to eat.

They will keep for 5 days.

Little tip.. I like to keep my energy balls in the freezer as they last longer and I’m not tempted to pop one in my mouth every time I open the fridge door.
