NOODLES IN A JAR
Perfect to batch cook and keep in the fridge. Think of this as the best pot noodle ever. How to make your Healthy Noodles In A Jar
Ingredients- Makes one jar
1/4 can of coconut milk
1 Tablespoon of miso
1 teaspoon gochujang
1cm grated ginger
80g egg noodles
100g diced firm tofu
Thinly Sliced cabbage (small amount)
1 Thinly sliced mushroom
A handful peas
handful chopped coriander
A few spinach leaves
Step 1
.Put the miso, ginger and gochujang at the bottom of the jar.
Break up the noodles and put them in next (they are uncooked)
Then add the coconut milk
Finally add all the veg and tofu. Doesn’t matter what order
Swap or add
Add cooked salmon or hard boiled eggs instead of the tofu. Use whatever veggies you have on the fridge, grated carrot, spring ionics, thinly sliced red onions, sweetcorn all work well.
Make four at a time and you can pop them in the fridge and take them to work as a delicious healthy warm lunch. They will last for at least four days. You don’t have to use weck jars but they work so well, look so good and are really nice to eat out of. Im using 850ml jars.
Step 2
If you are batch cooking and saving it for another day then pop on the lid an put it in the fridge
If you are easting it now. cover all the ingredients with boiling water, so the jar is 3/4 full. Pop on the lid and leave for 3-4 mins, give it a good stir and then leave for another 4 mins.
