POSH CHEESE ON TOAST

Quick and very tasty!

Ingredients Serves 2

150g finely grated cheddar cheese

3 eggs

1 small finely sliced red onion

2-4 sliced mushrooms

2 tablespoons tomato puree

4 slices brown bread

Salt and pepper to taste

Fresh salad of you choice on the side

How to

Crack the eggs into a bowl and stir in the finely grated cheese (It should be a thick consistency). Add salt and pepper.

Spread the tomato puree onto the bread and cover with the mushrooms and onion. Top with the egg and cheese mixture. Grill until crips and golden. Add a fresh green salad on the side.
