WARM SWEET POTATO & CHICKPEA POWER BOWL

This cozy bowl is loaded with fibre, plant protein, and slow-release carbs to keep your hormones and blood sugar happy

Ingredients:

  • 1 medium sweet potato, cubed

  • ½ can chickpeas, rinsed and drained

  • 1 cup baby spinach or kale

  • 1 tbsp olive oil

  • ½ tsp smoked paprika

  • Salt & pepper to taste

  • 1 spring onion sliced

  • handful of parsley- chopped

  • Optional: feta or avocado for topping

How to

Roast sweet potato cubes and chickpeas at 200°C (400°F) for 20–25 minutes with olive oil and seasoning.

Toss with fresh greens, spring onions, par top with feta or avocado, and drizzle with lemon juice.
