My Simple Veggie Spag-Bol

This is a staple meal in our house, super easy, very tasty and the kids love it too.

Ingredients: serves 3-4

  • 1 onion, diced

  • 2 cloves of garlic, diced

  • Olive oil (a drizzle)

  • 6 mushrooms, diced

  • Veggie mince

  • 2 tins of chopped tomatoes

  • Mixed herbs (to taste)

  • 3 Tbs Nutritional yeast

  • Salt (to taste)

How to

Heat a drizzle of olive oil in a pan over a medium heat.

Add the diced onion and garlic and fry for a few minutes until softened.

Add the diced mushrooms and cook for another 3–4 minutes.

Stir in the veggie mince and cook until heated through.

Add the two tins of chopped tomatoes.

Season with herbs and salt, stir well, and simmer for 10–15 minutes. Stir in the nutritional yeast.

Serve with cooked spaghetti. sprinkle some grated parmesan.
