Smashed Potato Crust ‘Quiche’

Perfect for a family meal. Replacing the pastry with potatoes. Super quick, tasty and nutritious. I would serve this with a big salad.

Ingredients serves 6

500g potatoes, boiled

3 eggs

250ml oatly or any milk

A handful of baby spinach

A handful of cherry tomatoes, halved

100g grated cheese

A little nutmeg, grated

Drizzle of olive oil

1/2 teaspoon salt

Add whatever veggies you like. peppers and mushrooms work well.

How to

Preheat oven to 200 degrees.

Smash the new potatoes into the bottom of your pie dish and up the side, to make your ‘pastry crust’ (the one I used is 28cm across) drizzle the potatoes with olive oil. Whisk together the eggs, milk, salt and nutmeg, pour this over the potatoes. Place the spinach and tomatoes on top and sprinkle with the grated cheese. Bake for 25 mins, or until the top is golden.
