Chickpea & Avocado Salad Wraps

Yummy and super quick!

Ingredients serves 2

  • 1 can chickpeas (15 oz), drained and rinsed

  • 1 ripe avocado

  • 1 small cucumber, diced

  • 1/2 small red onion, finely chopped

  • 1 handful cherry tomatoes, halved

  • Juice of 1 lemon

  • Salt & pepper to taste

  • Optional: chopped fresh parsley or cilantro

  • 2 large whole grain wraps.

‘optional add some feta!

How to

In a bowl, mash the chickpeas and avocado together with a fork. Add the cucumber, red onion, tomatoes, and lemon juice. Mix everything together until combined. Season with salt and pepper. Scoop the mixture into wraps or lettuce leaves. Roll up and enjoy immediately! If you want them warm you can toast them in a none stick frying pan.
